Banana Cream Cheese Bread

We all know how you all love our Banana Bread recipes. Banana is such a great ingredient to use in a loaf style cake as it contains a lot of moisture ensuring you get a good moist sponge and it also develops an incredible sweet and delicious flavour. For this Banana Cream Cheese Bread we combined this with cream cheese to add an alternating layer between the banana bread layers. This almost acts like a marble cake.

The Ingredients:

Banana Bread:
100g Light Brown Sugar
55g Caster Sugar
1 Egg
60ml Vegetable Oil
60g Natural or Greek Yoghurt
2tbsp Higher Nature Milled Flax Seeds (Optional)
2tsp Vanilla Extract/Paste
2 Large Bananas (Ripe are better)
125g NEILL’S® Plain Flour
0.5tsp Baking Powder
0.5tsp Bicarbonate Soda

Cream Cheese Layer:
120g Cream Cheese
1 Egg
55g Caster Sugar
1tsp Vanilla Extract
30g NEILL’S® Plain Flour

Recommended Equipment:
Sage Appliances Mixer Scraper Pro
Spatula
Standard Loaf Tin

The How-To:
Preheat oven to 175c.
Lightly grease and line the bottom of a standard loaf tin.
In the mixer beat the sugar, oil, egg, yoghurt and vanilla paste/extract until well combined.
Beat in the mashed bananas.
Fold in the flour, baking powder, bicarbonate soda and cold milled flax seeds (optional but add an excellent nutritional benefit). Fold together until just combined.
Set this mixture aside.
Now to make the cream cheese layer.
Beat the cream cheese, egg, caster sugar, flour and vanilla extract together until combined.
Pour 2/3 of your banana bread mixture into your prepared loaf tin.
Pour the cream cheese mixture on top and spread out.
Pour the remaining 1/3 of your banana bread mixture on top and spread out.
Bake in the centre of the oven for 50 mins or until a skewer inserted comes out clean.
Store in an air tight container and it tastes even better the next day.
